Is it possible to set the panning law in SS ?

Not at the current time.

But if you need specific pan/level requirements its pretty easy to use the automation to make the adjustment.

Automate the pan and then adjust the fader in any increments you need by automating it at the same timeline position... very easy to do.

I actually have variable pan curves on the todo list for a furtue update, but have not done them yet. :)

Variable user definable pan curves would be great.
Automaing levels in sync with panning is of course the most flexible way to do this, I think it's time for some automation gallery work...
