If you wanted to stay all in the digital domain, the RME RayDat has S/PDIF I/O. Reading around, with two runs of RG-6 for I/O you could use something like an M-Audio FastTrack Pro with S/PIDIF I/O for both headphones and a pair of playback inputs or talkback. Haven't tried it, but in theory it's possible. RG-6 isn't particularly flexible though. There are some people claiming wireless video extenders will transfer S/PIDIF just fine for about $50 but I'm not sure I'd trust them to work in all environments.

Not sure how to host it on the source end, but the ReaStream VST plugin could possibly stream audio from a FOH mixing laptop over the network to a VST plugin on a channel in SAC. Worth playing with. A mic input could also possibly be streamed the same way for talkback purposes.
