I have a Dell Precision M6700 laptop with an i7 which had two of the four cores "parked".

After some "tweaking" I was able to have all cores unparked - so that all cores are now available.

I think it depends what you want to do with the computer, as stated before audio capture and mixing needs real time processing, but Windows is NOT a real time operating system. The more processor cores you have, Windows will use them for Windows processes and may put your program further back in the Que. That's why both SAC/SAW have 'Use Single Processor/Processor Blocking' options. With more cores and setting Windows at 'High Performance', the system may generate more heat.

If the system has the ability, you could then disable some of the cores?

Yes that's what I would do, but again it all depends on what type of computing do. Multiple cores might work great with other programs, I understand that gamers like multi-core processors.

"Nope"...not a gamer, nor a CAD-er be,
Just a SAC-er...that's all for me!
So, if I can turn off a core or two,
That, I promise, will not make me blue.
